The first time I had green bean casserole was many years ago and I was totally in love with the dish. I wanted to change it up so I made this Slow Cooker Cheesy Green Bean Casserole. It did not disappoint and the leftovers were even better.

When you make this, you free up a little oven space for these Super Easy Rosemary Dinner Rolls or this Yummy Sweet Potato Casserole.  Or, perhaps you’ll want to make these Cheesy Smashed Roasted Brussels Sprouts with your dinner. No matter what’s on the menu, the green bean and cheese casserole is going to be the hit of the side dishes.

Slow Cooker Cheesy Green Bean Casserole

Just like the traditional oven-baked version, this slow cooker casserole use the cream of mushroom soup and the famous brand of crispy onion pieces. This recipe does not use canned beans, you can but I didn’t want to have them be overcooked or mushy. Instead, I used frozen green beans and did not thaw them. You can use fresh as well. I like the beans to be cooked to a crisp-tender bite. If you prefer a softer bite, cook them a little longer.

Timesaving Tips and Variations

  • In place of the mushroom soup, use cream of chicken or cream of celery or onion.
  • You can also make a Homemade Condensed Cream of Chicken Soup to use in this.
  • Sharp cheddar is the cheese I used, but you could use a white cheddar, or add a bit of zing with Pepper Jack cheese.
  • Using the crockpot, the crisp onions won’t brown as they would in the oven. You can top the baked dish with them as is or you can take a couple of minutes and brown them in a skillet, then add before serving.
  • Get creative with leftovers, add a bit of the vegetable dish to these Air Fryer Thanksgiving Egg Rolls

A few simple tweaks can take your dish from good to absolutely unforgettable.

How do you store leftover green bean casserole?

Transfer leftovers to an airtight container and refrigerate for up to three days. Reheat in the oven at a low temperature to maintain the creamy texture, or use a microwave for a quicker option. A splash of milk may be needed.

  • French fried onions
  • sharp cheddar

Directions to Make Slow Cooker Cheesy Green Bean Casserole

In a slow cooker, combine the soup, milk, and salt and pepper (to taste) – Stir until well blended. Mix in the frozen green beans, about half of the container of fried onions, and half of the cheese.

add casserole ingredients to slow cooker

Top the mixture with the remaining cheese. Cover and cook on high for about 2.5 hours.

top green beans with more cheese

For the fried onions, I choose to toast the onions in a small skillet (no oil or spray) until golden brown. Watch them closely. Alternatively, you can top the casserole without toasting or browning them. If your slow cooker can go into the oven, you could also top the casserole with onions and place it in the broiler for a few minutes before serving.

    1. Great idea to make this in the slow cooker when oven space is at a premium.

    2. 5 stars
Love that this is made in the crock-pot. It’s always nice to have things made that don’t go in the oven!

    3. Sounds perfect! Yes frozen green beans are so much better than canned!

    4. I’ve been searching for slow cooker recipes made with frozen green beans, but I’m getting confused. Some say you must thaw and drain frozen beans or the result will be too soupy. Others say to just throw them in frozen. Maybe the extra liquid from the beans will help thin the condensed soup?? This recipe sounds the easiest, but wondering if the sauce ends up too thin?

      1. Jodi, The sauce in this recipe doesn’t end up too thin at all. It just helps thin the soup a little more. The amount of liquid that comes from the beans really isn’t much and you are only adding a little milk to help thin out the soup. We’ve never had it be too “soupy” or liquidity.

A holiday classic without taking up oven space. That is a win!!
